Nut and Mixed Fruit Bread

Ingredients for 15 piece 1 loaf pan

  • ½ cup of Fuel By Nature Dried Apricots
  • 1 lemon
  • 3 large apples
  • 5 oz raisins
  • 5 oz skinned almond kernels
  • 4 oz hazelnuts
  • 2 tbsp. honey
  • 1 tsp cinnamon
  • 1 pinch clove powder
  • 1 fl oz orange juice
  • 1 ¼ cup wheat flour
  • 1 tsp. baking powder
  • 1 pinch salt
  • 1 egg
  • 2 tbsp. condensed milk
  • 6 cherries

Preparation

Total time approx. 1 hour 20 minutes

1. Halve the lemon and squeeze out the juice. Peel the apples, cut out the core in quarters and roughly grate, mix immediately with the lemon juice. Roughly dice the apricots. Mix the apples with raisins, almonds (put some aside for decoration), hazelnuts, apricots, honey, spices and orange juice and leave to steep overnight.

2. For the dough, mix the flour, baking powder and salt and knead with the egg into the fruit mixture. Pour the dough into a box form lined with baking paper and smooth it out. Brush with condensed milk and decorate with cherry and remaining almonds. Bake in a preheated oven at 350°F for about 1 hour, remove, let cool down a little, turn out of the mold and let cool down.
