Chocolate Fruit Cake

  • 1 ½ cup Fuel By Nature Dried Figs
  • 1 ½ cup prunes
  • 1 cup baked fruit
  • 1 cup almond kernels
  • ¾ cup hazelnuts
  • 5 eggs
  • 5 oz butter
  • 1 tbsp. honey
  • 1 cup spelled flour
  • 1 pinch ground clove
  • ½ tsp ground ginger
  • 1 tbsp. cinnamon
  • 4 oz dark chocolate
  • 1 oz coconut oil

Total time approx. 1 hour 30 minutes

1. Roughly chop prunes, figs and baked fruits. Chop the nuts with a knife or briefly put them in a lightning chopper. Separate the eggs, beat the egg whites with a hand mixer to form firm snow. Beat the butter and honey until frothy, then add the egg yolk and flour and stir to form a smooth dough. Knead the fruits, nuts and spices into the dough and carefully fold in the egg whites.

2. Line a loaf pan with baking paper and pour in the batter. Bake in a preheated oven at 350°F for about 60 minutes. 3. Take the cake out of the oven and let it cool down. In the meantime, chop the chocolate and melt it together with coconut oil over a hot water bath. Forgive the cake with the chocolate.
